Ingredients
  

Flatbread

  • 1 teaspoon active dry or instant yeast
  • 1 teaspoon granulated sugar
  • ¾ cup warm water (between 100-110°F, 38-43°C)
  • 2 cups all-purpose flour or bread flour [spooned & leveled]
  • 1 tablespoon olive oil plus 1 teaspoon for brushing the dough
  • 1 teaspoon salt

Toppings

  • 2 cups halved cherry tomatoes
  • 1 tablespoon olive oil plus 1 teaspoon, divided
  • salt & freshly ground black pepper
  • 2 cups part-skim ricotta cheese
  • 3 tablespoons chopped fresh basil
  • 2 tablespoons milk to thin
  • 1–2 teaspoons fresh lemon juice
  • 2 teaspoons minced garlic (or a few cloves, chopped)
  • 2 cups sliced zucchini (1–2 medium zucchini, about ½ lb.)
  • 6–8 ounces goat cheese (depending how much you like!)
  • optional: crushed red pepper flakes and fresh basil to top

Instructions
 

Flatbread Preparation

  • Whisk the yeast, sugar, and warm water together in the bowl of your stand mixer. Loosely cover and allow to sit for 5–10 minutes until foamy and frothy on top.
  • Add the flour, olive oil, and salt (and garlic/seasoning if using). Mix on low speed with the dough hook attachment until combined, about 2 minutes.
  • Knead the dough either in the mixer or by hand on a lightly floured surface for 6-8 minutes until it feels a little soft and bounces back when poked.

Toppings Preparation

  • Prepare the toppings by slicing the zucchini and halving the cherry tomatoes, then set aside.
  • Once the dough has risen, spread the ricotta cheese over the flattened flatbread base, then layer with zucchini, tomatoes, garlic, and basil.
  • Bake in a preheated oven until the edges are golden brown, about 20 minutes.

Notes

For additional flavor, consider adding herbs or spices to the ricotta mixture as desired.
