Ingredients
  

SAUCE

  • 2.5 tablespoons dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon mirin
  • 2 teaspoons brown sugar
  • 0.5 teaspoon rice vinegar

NOODLES

  • 200 grams sliced beef
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 4 leaves Chinese cabbage sliced, whites separated from greens
  • 2 stalks green onions sliced into 1cm pieces
  • 200 grams precooked udon noodles

Instructions
 

Preparation

  • Marinate the sliced beef in 1 tablespoon of dark soy sauce for 10 minutes.
  • Cook the udon noodles in boiling water for 2 minutes, then rinse under cold water.
  • In a bowl, mix together the ingredients for the sauce.
  • In a pan, heat some oil over high heat and stir-fry the beef for 5 minutes, then set aside.
  • Sauté the minced garlic for 2 minutes until browned.
  • Add sliced onions and the white parts of the cabbage, stir-fry for 5 minutes.
  • Add the green parts of the cabbage and the green onions, stir-fry for 2 minutes.
  • Add the noodles and the beef, and stir-fry for 3 minutes.
  • Add the sauce and reduce while mixing for 5 minutes.

Notes

Cooking yaki udon is often done by eye; observe your ingredients closely. If they brown too quickly, the oil is too hot.
