Ingredients
  

  • 1 tablespoon butter
  • 1 tablespoon olive oil packed with flavor
  • 4 pieces salmon fillet
  • salt to taste
  • pepper to taste
  • 2 cloves garlic minced
  • 3-4 pieces sun-dried tomatoes sliced, packed in oil
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 50 g Parmesan cheese grated
  • 30 g fresh spinach

Instructions
 

  • Pat the salmon dry with a paper towel. Season salmon with salt and pepper. Heat the olive oil together with butter in a frying pan, then sear the salmon until golden, starting with the skin side up, for about 6-7 minutes. Remove to a plate.
  • To the same pan, add garlic and sliced sun-dried tomatoes, sauté for about 30 seconds over low heat, then add the white wine and let it simmer for about 5 minutes until reduced by half.
  • Add the heavy cream and grated Parmesan cheese, stir until incorporated, then add the spinach and return the salmon to the pan. Let simmer for 5 minutes. Season sauce with salt to taste.

Notes

Remove excess moisture from the salmon for better searing. For the sauce, using the oil from sun-dried tomatoes enhances flavor. Adjust seasonings as needed, and return salmon to ensure full cooking without overcooking.
