Tomato Dumpling Soup: The Best Comfort Food for Cozy Nights

Ingredients
  

  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 cans (400g) chopped tomatoes
  • 500 ml chicken stock
  • ½ teaspoon sugar
  • 50 ml single cream
  • 125 grams dried breadcrumbs
  • ½ teaspoon baking powder
  • 75 grams mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 whole egg
  • 50 grams cream cheese

Instructions
 

  • Heat oil and butter in large pot. Cook onion and sweet potato over low heat 5-10 minutes until soft.
  • Add garlic and cinnamon, cook 1 minute. Stir in basil, tomatoes, and stock.
  • Bring to boil, then reduce heat and simmer covered for 20 minutes.
  • Mix all dumpling ingredients in bowl to form stiff mixture. Shape into 8 balls.
  • Blend soup until smooth. Add sugar, salt, pepper and cream to taste.
  • Drop dumplings into soup and simmer 10 minutes without stirring. Serve 2 dumplings per bowl with soup.

Notes

Don't stir after adding dumplings. Dumplings will be dense not fluffy. Can garnish with extra cheese and basil.
