For the Matcha Cake
- 2 ¼ cups all-purpose flour spooned and leveled
- 2 tablespoon ceremonial grade matcha powder bright green
- 1 ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 10 tablespoon unsalted butter softened
- 1 ½ cups granulated white sugar
- 3 eggs eggs at room temperature
- 1 tablespoon vanilla
- 1 cup buttermilk 240 ml
For the Matcha Latte Soak
- 2 teaspoon ceremonial grade matcha powder bright green
- 2 tablespoon water
- ½ cup whole milk 120 ml
- ½ - ¾ cup sweetened condensed milk depending on sweetness
- 1 teaspoon vanilla
For the Strawberry Cream Cheese Frosting
- 1 cup unsalted butter softened
- 8 oz cream cheese cold
- 2 ½ cups powdered sugar
- 1 cup freeze dried strawberries
For the Matcha Cake
Preheat the oven to 350℉ (175 ℃). Grease a 9×9in pan and line it with parchment paper.
In a medium bowl, whisk together the flour, matcha powder, baking powder, baking soda, and salt. Set aside.
Add the softened butter and sugar to a large bowl. Cream together for 2 minutes.
Add in the eggs and vanilla and mix until pale in color and smooth.
Add the dry ingredients and buttermilk to the wet ingredients little by little, mixing until combined.
Pour the batter into the prepared pan. Bake for 38-42 minutes or until a toothpick comes out clean.
Let the cake cool in the pan for 30 minutes, and then continue cooling on a wire rack until completely cooled.
For the Matcha Latte Soak
Sift the matcha powder into a bowl. Pour in the water and whisk until smooth.
Add in the milk, sweetened condensed milk, and vanilla.
For the Strawberry Cream Cheese Frosting
Add the softened butter and cream cheese to a bowl. Mix on high speed until fluffy.
Add freeze dried strawberries to a food processor and grind them finely. Pass through a sieve.
Add powdered sugar and ground strawberries. Mix until combined and fluffy.
Assembling the Cake
When the cake is completely cooled, cut a thin layer off the top. Transfer to a serving plate.
Poke holes in the top of the cake with a wooden stick.
Slowly pour the matcha mixture on top, allowing it to absorb.
Frost with a thick layer of strawberry cream cheese frosting, cut into slices, and serve.
