Instructions

For the Matcha Cake

  • Preheat the oven to 350℉ (175 ℃). Grease a 9×9in pan and line it with parchment paper.
  • In a medium bowl, whisk together the flour, matcha powder, baking powder, baking soda, and salt. Set aside.
  • Add the softened butter and sugar to a large bowl. Cream together for 2 minutes.
  • Add in the eggs and vanilla and mix until pale in color and smooth.
  • Add the dry ingredients and buttermilk to the wet ingredients little by little, mixing until combined.
  • Pour the batter into the prepared pan. Bake for 38-42 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for 30 minutes, and then continue cooling on a wire rack until completely cooled.

  • Add freeze dried strawberries to a food processor and grind them finely. Pass through a sieve.
  • Add powdered sugar and ground strawberries. Mix until combined and fluffy.

Assembling the Cake

  • When the cake is completely cooled, cut a thin layer off the top. Transfer to a serving plate.
  • Poke holes in the top of the cake with a wooden stick.
  • Slowly pour the matcha mixture on top, allowing it to absorb.
  • Frost with a thick layer of strawberry cream cheese frosting, cut into slices, and serve.
