Ingredients
  

Strawberry Purée

  • 1 cup strawberries frozen; or fresh if sweet and in season
  • 2 teaspoon sugar skip for fresh berries
  • 1 tablespoon water skip for fresh berries

Latte Base

  • 1 serving strawberry purée prepared purée
  • 10 ice cubes ice cubes
  • 1.5–2 teaspoon matcha (ceremonial or culinary grade) use more for a strong matcha flavor
  • 3 tablespoon hot water at 176°F or 80°C
  • ¾ cup milk

Instructions
 

Make Strawberry Purée

  • Measure 1 cup strawberries (frozen). Add 2 teaspoon sugar.
  • Add 1 tablespoon water. Purée in a blender until smooth.
  • You will have 2 servings of purée. Add 1 serving strawberry purée to the bottom of a tall glass.
  • Gently add about 10 ice cubes on top of the purée.

Whisk Matcha Tea

  • Sift 1½–2 teaspoon matcha over a matcha bowl.
  • Add 3 tablespoon hot water and whisk vigorously until frothy.

Build Strawberry Matcha Latte

  • Pour ¾ cup milk in a thin stream onto the ice cubes.
  • Slowly pour matcha tea into the glass around the surface.

Store

  • Store leftover strawberry purée in an airtight container. Do not refreeze previously frozen strawberries.

Notes

For the best flavor, whisk the matcha tea just before serving.
