Ingredients
  

blondies

  • 1 cup unsalted butter at room temperature
  • ¾ cup sugar
  • 1 large egg
  • ¼ cup fresh squeezed lemon juice
  • 2 ¼ cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup diced fresh strawberries

glaze

  • 1 cup powdered sugar sifted
  • 1 tablespoon strawberry puree about 2 large strawberries needed
  • 1 tablespoon lemon juice or just enough to thin the glaze

Instructions
 

Preparation

  • Preheat the oven to 350F.
  • Line a 9 inch square baking pan with parchment paper.
  • Cream the butter and sugar until fluffy. Beat in the egg.
  • Add the lemon juice and mix until incorporated.
  • Whisk together the flour, baking powder, and salt. Add to wet ingredients and mix until just combined.
  • Gently fold in the diced strawberries. Spread mixture into the pan.
  • Bake for 30-35 minutes until golden edges and center set. Let cool.
  • Puree strawberries for glaze, strain to get 1 Tbsp. Whisk with sugar and lemon juice until smooth.
  • Spread glaze over cooled blondies and let set before slicing.

Notes

Measure flour accurately by fluffing, scooping, and leveling. Test glaze thickness before using.
