Ingredients
  

Bacon and Cheese Filling

  • 4 strips thick-cut bacon
  • 8 ounces reduced-fat cream cheese (Neufchâtel) cut into large pieces
  • 2 large eggs divided
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried oregano
  • 10 ounces frozen spinach (1 package) thawed and thoroughly pressed dry
  • 0.5 cup crumbled feta about 2 ounces
  • 0.25 cup finely grated Parmesan about 1 ounce

Pastry

  • 2 sheets frozen puff pastry (9- or 10-inch) thawed overnight in the refrigerator

Instructions
 

Preparation

  • Place racks in the upper and lower thirds of your oven and preheat to 400°F. Bake bacon according to directions for Baked Bacon. Let cool and chop or crumble into bits.
  • Meanwhile, place cream cheese pieces in a wide microwave-safe bowl. Microwave in 10 second bursts until very soft and melty. Stir in 1 egg, garlic powder, black pepper, and oregano until well combined.
  • In a separate bowl, combine spinach, feta, Parmesan, and chopped bacon. Scrape the cream cheese mixture on top and stir until well combined. Adjust seasoning as desired.
  • Unfold the first sheet of pastry on a lightly floured surface and roll to remove creases. Cut into 9 squares. Line muffin pan with squares, allowing corners to overhang sides.
  • Portion spinach filling into each muffin cup, then bring points of pastry together towards center and lightly press. Beat remaining egg and brush over tops.
  • Bake for 21 to 24 minutes until puffy and golden, switching pans midway. Allow to cool for 10 minutes, then transfer to wire rack.

Notes

Puffs can be frozen for up to 1 month. Filling can be made a day in advance and stored in an airtight container. Best enjoyed fresh but can be reheated.
