Salad Ingredients

  • 4 cups fresh baby spinach chopped
  • ½ lb ditalini pasta cooked, rinsed and cooled
  • 1 6 oz container Feta Crumbles use athenos
  • 2 jars Marinated Artichoke Hearts drained and trimmed
  • ½ cup Roasted Red Peppers finely diced
  • ½ cup red onion finely diced
  • ½ cup Banana Peppers finely diced
  • cup Garlic Expressions Salad Dressing or another garlicky italian style dressing
  • 2 tablespoon White Balsamic Vinegar

Preparation

  • In a large bowl, combine the baby spinach, cooked ditalini pasta, feta crumbles, marinated artichoke hearts, roasted red peppers, red onion, banana peppers, garlic dressing, and white balsamic vinegar. Toss well to combine.

Notes

This salad can be made ahead of time and served chilled or at room temperature.
