Slow Cooker Queso Chicken Tacos

Equipment

  • 6-quart slow cooker

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 oz package taco seasoning See recipe for homemade seasoning
  • 10 oz can Rotel diced tomatoes and green chilies
  • 1.5 cups Mexican cheese dip Refrigerated or jarred

Instructions
 

  • Place chicken in a 6-qt slow cooker. Sprinkle with taco seasoning and top with tomatoes.
  • Cover and cook on LOW for 4 to 6 hours.
  • Remove chicken from slow cooker and shred with two forks. Return chicken to slow cooker and stir in cheese dip.
  • Serve with tortillas or hard taco shells and favorite taco toppings.

Notes

If you feel that there is too much liquid in the slow cooker after the chicken cooks, you can drain it out. The amount of liquid will just depend on the size and brand of chicken that you use. Can use more or less cheese dip. Adjust measurements to your personal preference. Can freeze leftover chicken for later.
