Ingredients
  

  • 6 pieces boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • Salt to taste
  • black pepper to taste
  • ½ cup fig jam high-quality for best flavor
  • 2 tablespoons chicken broth
  • 4 ounces goat cheese, crumbled add at the end
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions
 

  • Season chicken thighs with garlic powder, onion powder, thyme, salt, and black pepper.
  • Heat olive oil in a skillet over medium-high heat and sear chicken for 2 minutes per side until lightly golden.
  • Transfer chicken thighs to the slow cooker.
  • Mix fig jam and chicken broth in a bowl, then pour over chicken.
  • Cover and cook on low for 4–5 hours or high for 2–3 hours until tender.
  • Add goat cheese during the last 10 minutes of cooking and let it melt slightly.
  • Garnish with fresh parsley and serve warm.
