For the Chicken
- 4 pieces Boneless, skinless chicken breasts
For the Cheese Filling
- 1 cup Shredded mozzarella cheese Feel free to use cheddar or pepper Jack for a spice kick.
- ½ cup Grated Parmesan cheese Try Pecorino Romano for a sharper bite.

Cooking Instructions
Preheat your oven to 375°F (190°C) and grease a baking dish with a drizzle of olive oil or cooking spray.
Mix together the shredded mozzarella, grated Parmesan, minced garlic, onion powder, smoked paprika, oregano, basil, salt, and pepper in a bowl.
Cut pockets into each boneless, skinless chicken breast, being careful not to slice all the way through.
Stuff each chicken pocket generously with the cheese mixture and chopped spinach.
Wrap each stuffed chicken breast in a large tortilla, securing with toothpicks if needed.
Arrange the wraps seam-side down in the greased baking dish, then drizzle a bit of olive oil over the top.
Cover the dish with foil and bake for 20 minutes.
Uncover and continue baking for an additional 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the tortillas are golden brown.
