Ingredients
  

For the Salmon Balls

  • 1 lb fresh salmon, cooked and flaked
  • ½ cup almond flour or gluten-free breadcrumbs
  • 2 eggs
  • 2 tablespoon chopped fresh parsley
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • Olive oil spray for baking

For the Creamy Avocado Sauce

  • 1 ripe avocado
  • ¼ cup Greek yogurt or dairy-free yogurt
  • 2 tablespoon lime juice freshly squeezed
  • 1 clove garlic
  • 2 tablespoon fresh cilantro or parsley
  • Salt to taste
  • 2–3 tablespoon water to thin the sauce as needed

  • Prep Your Salmon: Bake fresh salmon at 375°F (190°C) for 15–20 minutes. Flake once cooled.
  • Mix the Salmon Ball Mixture: Combine flaked salmon, almond flour, eggs, parsley, green onions, garlic, Dijon mustard, smoked paprika, salt, and pepper. Mix gently.
  • Shape into Balls: Scoop about 1 ½ tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet and lightly spray with olive oil.
  • Bake to Perfection: Bake in a preheated oven at 400°F (200°C) for 18–20 minutes, flipping halfway through.
  • Make the Creamy Avocado Sauce: Blend all sauce ingredients until smooth. Add water as needed for desired consistency.
  • Serve and Enjoy: Serve warm salmon balls with creamy avocado sauce.
