Ingredients
  

Dry Ingredients

  • 105 g almond flour
  • 105 g powdered sugar

Meringue Ingredients

  • 4 g egg white powder
  • 100 g granulated sugar
  • 100 g egg whites

Coloring

  • red gel food coloring
  • blue gel food coloring
  • white powder food coloring

Raspberry Filling

  • 1 cup raspberries fresh or frozen
  • ¼ cup maple syrup or sugar substitute
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with cold water
  • 1 tablespoon cold water

Cream Cheese Frosting

  • 85 g cream cheese softened
  • 42.5 g unsalted butter softened
  • 125 g powdered sugar
  • ¼ teaspoon vanilla extract

Decoration

  • ¼ cup white chocolate
  • ¼ cup sprinkles

Instructions
 

Macaron Preparation

  • Prepare baking sheets with parchment or silicone mats and fit piping bags with round tips. Sift almond flour and powdered sugar together.
  • Heat sugar, egg white powder, and egg whites over a double boiler while whisking until dissolved and frothy. Then whip into stiff glossy peaks.
  • Fold dry ingredients into the meringue gently until a smooth batter forms with ribbon consistency.
  • Divide batter and color with red, white, and blue food coloring. Pipe small rounds onto trays and tap to release air bubbles.
  • Let shells rest until a skin forms. Bake until set, then cool completely.

Filling Preparation

  • Cook raspberries with sweetener and lemon juice. Add cornstarch slurry and cook until thickened into jam.
  • Beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy.
  • Pipe frosting onto shells, add raspberry jam center, and sandwich together. Refrigerate for 24 hours before serving.

Notes

Use gel or powdered food coloring for best results. Avoid overmixing the batter and always allow shells to rest before baking. Macarons taste better after resting in the fridge for 24 hours.
