Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, softened
  • 0.75 cups granulated sugar
  • 0.25 cups packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cups mashed ripe banana (about 2-3 bananas)
  • 1 cups pumpkin puree (not pumpkin pie filling)
  • 0.5 cups chopped walnuts or pecans (optional)

Instructions
 

Preparing the Batter

  • In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  • In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Add the mashed banana and pumpkin puree to the wet ingredients and mix until just combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If using nuts, fold them into the batter.

Baking Process

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake for 55-70 minutes, checking for doneness with a skewer.
  • Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for sweetness. Don’t overmix the batter and store in an airtight container.
