Beef Roast
- 1 5-6 pound bone-in prime rib roast
Seasoning
- 2 tablespoons kosher salt
- 2 tablespoons freshly ground black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon onion powder
Preparation
Remove the prime rib roast from the refrigerator and let it come to room temperature for about 1 hour.
Preheat the oven to 450°F (230°C).
In a small bowl, mix together salt, pepper, olive oil, minced garlic, rosemary, thyme, and onion powder to form a paste.
Rub the seasoning paste all over the surface of the roast. Place roast, bone-side down, on a rack in a roasting pan.
Roast in the preheated oven for 20 minutes, then reduce oven temperature to 325°F (165°C) and continue to roast for about 1 hour 30 minutes, or until desired doneness is reached.
Remove the roast from the oven. Tent loosely with foil and let rest for 20-30 minutes before slicing and serving.
