Ingredients
  

Beef Roast

  • 1 5-6 pound bone-in prime rib roast

Seasoning

  • 2 tablespoons kosher salt
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon onion powder

Preparation

  • Remove the prime rib roast from the refrigerator and let it come to room temperature for about 1 hour.
  • Preheat the oven to 450°F (230°C).
  • In a small bowl, mix together salt, pepper, olive oil, minced garlic, rosemary, thyme, and onion powder to form a paste.
  • Rub the seasoning paste all over the surface of the roast. Place roast, bone-side down, on a rack in a roasting pan.
  • Roast in the preheated oven for 20 minutes, then reduce oven temperature to 325°F (165°C) and continue to roast for about 1 hour 30 minutes, or until desired doneness is reached.
  • Remove the roast from the oven. Tent loosely with foil and let rest for 20-30 minutes before slicing and serving.
