Ingredients
  

Chicken

  • 2 pieces chicken breasts
  • ¼ teaspoon salt
  • teaspoon pepper
  • teaspoon garlic powder

Sandwich

  • 4 rolls ciabatta
  • 1 tablespoon olive oil
  • 4 slices fresh mozzarella
  • ½ cup pesto homemade
  • 1 piece tomato sliced
  • 2 cups arugula

Instructions
 

Chicken Preparation

  • Slice chicken breasts in half so you have thinner pieces.
  • Sprinkle chicken with salt, pepper, and garlic powder.
  • Cook over a preheated grill until cooked through.

Sandwich Assembly

  • Lightly brush the inside of the ciabatta rolls with olive oil and toast on grill.
  • Place cooked chicken on a cookie sheet and top each breast with mozzarella, then broil.
  • Spread pesto on the top half of the bun.
  • Assemble sandwich by placing chicken breast on bottom bun, topping with tomato and arugula.
  • Serve right away.

Notes

Slice your chicken breasts to ensure even cooking. Toasting the bun helps prevent sogginess when adding sandwich ingredients.
