Focaccia Sandwich Ingredients

  • 1 slices Focaccia Bread sliced
  • 2 tablespoon homemade Chipotle Mayo
  • ⅛-1/4 cup gouda cheese shredded or sliced
  • 1 tablespoon Peppadew or Pimiento peppers from a jar
  • ½ ripe avocado smashed
  • ¼ cup roast chicken shredded
  • jalapeno peppers optional
  • cilantro leaves

Homemade Chipotle Mayo

  • 2 tablespoon mayo
  • 1 teaspoon sour cream or yogurt
  • 2 teaspoon chipotle peppers in adobo sauce easily available in stores
  • salt to taste
  • lemon juice to taste
  • water for desired consistency

Preparation Steps

  • Slice focaccia bread and lightly toast.
  • On one slice, smear the homemade chipotle mayo, add chicken, gouda, peppers and cilantro. On the other half spread the smashed avocado.
  • Sprinkle cracked black pepper, some salt and top with more chipotle mayo and enjoy!

Notes

Feel free to adjust the spiciness by adding or omitting jalapeno peppers.
