Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter, melted

Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 0.5 cup orange juice
  • 1 tablespoon orange zest
  • 0.5 cup whipped cream
  • 0.5 cup pineapple chunks, drained
  • 0.5 cup mandarin orange slices, drained

Preparation

  • Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and chill until firm.
  • Beat cream cheese and sugar until smooth. Add eggs one at a time and mix well after each addition.
  • Blend in sour cream, vanilla extract, orange juice, and orange zest until creamy.
  • Pour half the filling over the crust. Add pineapple and orange slices, then top with remaining filling and fruit. Swirl gently.
  • Refrigerate for several hours until fully set. Decorate with whipped cream and fresh fruit before serving.

Notes

Drain pineapple well to avoid extra moisture. Chill the cheesecake fully for best texture. Adjust the swirl for your preferred look and flavor balance.
