- 1 large head cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 2 tablespoons sour cream
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh chives optional
Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes until very tender.
Drain the cauliflower thoroughly and transfer to a food processor.
Add butter, garlic, Parmesan cheese, sour cream, salt, and black pepper to the food processor.
Blend until the mixture is smooth and creamy, scraping down the sides as needed.
Taste and adjust seasoning if necessary. Transfer to a serving bowl and garnish with fresh chives if desired.
