Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons sour cream
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh chives optional

Instructions
 

  • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes until very tender.
  • Drain the cauliflower thoroughly and transfer to a food processor.
  • Add butter, garlic, Parmesan cheese, sour cream, salt, and black pepper to the food processor.
  • Blend until the mixture is smooth and creamy, scraping down the sides as needed.
  • Taste and adjust seasoning if necessary. Transfer to a serving bowl and garnish with fresh chives if desired.
