Instructions

For the Earl Grey Rolls

  • Bloom your yeast by mixing active dry yeast, sugar, and warm milk together and let sit for 10 minutes until foamy.
  • Grind Earl Grey tea in a spice grinder and sieve to separate any large bits.
  • Mix flour, salt, sugar, and finely ground Earl Grey tea together in a bowl.
  • Add eggs, vanilla, and softened butter to dry ingredients and mix.
  • Add yeast mixture and blend. Knead on medium speed for 7-10 minutes until dough forms a ball.
  • Form dough into a ball, place in a greased bowl, cover, and let rise for 1-1.5 hours.

For the Earl Grey Filling

  • While the dough rises, grind remaining Earl Grey tea as before.
  • Mix butter, brown sugar, granulated sugar, vanilla, honey, salt, and ground tea together until smooth.

Assembling and Baking the Rolls

  • Grease a casserole dish and set aside.
  • Roll dough into an 18 x 12 inch rectangle. Spread Earl Grey filling evenly.
  • Roll dough tightly into a log shape and cut into 12 rolls.
  • Place rolls in the dish, pour heavy cream in between, cover, and proof for about an hour.
  • Preheat oven to 350 ℉ (175 ℃) 15 minutes before baking.
  • Bake for 22-25 minutes until lightly golden.

For the Lavender Cream Cheese Frosting

  • Grind lavender in a food processor.
  • Mix softened butter and cream cheese until fluffy.
  • Add powdered sugar, vanilla, and ground lavender; mix until combined.
  • Optionally add food coloring and mix until frosting is light and fluffy.
  • Cool rolls for 5 minutes, cover with frosting, and serve!
