Ingredients
  

POTATOES

  • 700 g potatoes, diced into 2 cm cubes approximately 2 medium potatoes per person
  • 2 tablespoon extra-virgin olive oil
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt flakes
  • 0.25 teaspoon freshly cracked black pepper

BEEF

  • 1 tablespoon extra-virgin olive oil
  • 0.5 unit red onion, finely chopped
  • 500 g minced (ground) beef regular or lean
  • 1 tablespoon sweet paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt flakes
  • 0.25 teaspoon freshly cracked black pepper
  • 2 tablespoon tomato paste concentrated puree
  • 0.25 cup water 60 ml

GUACAMOLE

  • 2 unit avocados, mashed with a fork
  • 0.25 bunch coriander (cilantro), finely chopped
  • 0.25 unit red onion, finely diced
  • 1 unit lime, juice
  • 0.5 teaspoon sea salt flakes
  • 0.25 teaspoon freshly cracked black pepper

SALSA

  • 2 unit tomatoes, finely diced
  • 0.25 bunch coriander (cilantro), finely chopped
  • 0.25 unit red onion, finely diced
  • 1 unit lime, juice
  • 0.5 teaspoon sea salt flakes
  • 0.25 teaspoon freshly cracked black pepper

TO SERVE

  • 2 cups grated Mexican cheese blend 250 g
  • Lime wedges optional

Instructions
 

COOKING

  • Preheat the oven to 220°C (425°F) for at least 20 minutes.
  • To a large baking tray lined with baking paper, add the potatoes, oil, paprika, garlic powder, salt, and pepper. Toss to coat. Spread the potatoes out evenly.
  • Bake for 40–45 minutes or until crisp and golden, turning once halfway through.
  • Meanwhile, to make the beef, heat the oil in a large frying pan over medium–high heat.
  • Add the onion and cook for 1–2 minutes until slightly softened.
  • Add the minced beef and cook for 3–4 minutes, breaking it up with a wooden spoon.
  • Add the sweet paprika, cumin, onion powder, garlic powder, oregano, salt, and pepper. Cook, stirring, for 30 seconds.
  • Add the tomato paste and cook, stirring, for 1 minute.
  • Add the water and simmer over low heat for 3–4 minutes or until most of the liquid has evaporated.

Notes

Serve the potato and beef mixture in bowls, topped with guacamole, salsa, and cheese. Garnish with lime wedges if desired.
