Ingredients
  

For the Tortilla Shells

  • 4 pieces Flour Tortillas or corn tortillas for gluten-free
  • 3 tablespoons Brown Sugar or coconut sugar for a healthier substitution
  • 1 teaspoon Cinnamon

For the Apple Filling

  • 2 tablespoons Cornstarch or arrowroot if desired
  • 1 cup Water
  • 3 cups Apples Granny Smith or Honeycrisp preferred
  • 1 teaspoon Vanilla Extract opt for pure vanilla for best taste

For the Cheesecake Filling

  • 8 ounces Cream Cheese or Neufchâtel for a lighter option
  • 1 cup Heavy Cream or whipped coconut cream for dairy-free
  • 1 cup Powdered Sugar granulated sugar can be blended for a DIY version

For the Topping

  • 1 cup Apple Pie Filling or cherry, blueberry, or strawberry pie filling for variation

Directions

  • Prepare Cinnamon Sugar Tortilla Shells: Cut tortillas into 3.5 - 4 inch circles. Mix brown sugar and cinnamon, then set aside.
  • Fry Tortilla Circles: Heat oil in a skillet over medium heat. Fry circles for 10-15 seconds on each side until golden brown, folding them in half to shape.
  • Coat in Sugar: Remove tortillas from oil, drain excess, and coat in cinnamon sugar mixture while hot.
  • Make Apple Filling: In a pot, combine water, cornstarch, brown sugar, cinnamon, and nutmeg over medium heat until thick. Add apple slices and cook until tender.
  • Cool Filling: Allow the apple filling to cool slightly.
  • Make Cheesecake Filling: Beat cream cheese, heavy cream, powdered sugar, and vanilla until thick. Transfer to a piping bag.
  • Assemble Tacos: Pipe cheesecake filling into each taco shell and top with apple pie filling.
