Ingredients
  

For the Crust

  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 1 pinch salt
  • 2-3 tablespoons ice water

For the Filling

  • ¾ cup honey
  • 2 large eggs, room temperature
  • cup sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, toasted

Preparation

  • Mix the all-purpose flour with the cold, cubed unsalted butter until the mixture resembles coarse crumbs. Add a pinch of salt and 2-3 tablespoons of ice water, then gently bring the dough together without overworking it. Chill the dough for 30 minutes to develop a flaky texture.
  • Place walnuts in a dry skillet over medium heat and toast them until fragrant and golden brown, about 5 to 7 minutes.
  • In a mixing bowl, whisk together honey, eggs, sugar, heavy cream, and vanilla extract until the mixture is smooth and well combined.
  • Roll out the chilled dough into your tart pan, then evenly arrange the toasted walnuts over the crust. Gently pour the honey filling over the walnuts.
  • Preheat the oven to 350°F (175°C). Bake the assembled tart for 35 to 40 minutes, or until the filling is set and golden around the edges. Let the tart cool completely before slicing.

Notes

Make sure the butter is very cold when mixing the crust to achieve a flaky texture. Don’t overwork the dough to prevent a tough crust. Chilling the dough before rolling out is crucial for the best crust results. Toast walnuts carefully and watch closely to avoid burning. Let the tart cool fully before cutting to avoid messy slices. Room temperature eggs help create a smoother filling.
