Ingredients
  

Dry Ingredients

  • 1.5 cups super fine almond flour
  • 0.25 teaspoon sea salt or less
  • 1 teaspoon vanilla extract or almond extract
  • 1 teaspoon baking powder

Wet Ingredients

  • 4 units eggs separated, yolk from whites
  • 2 tablespoon lemon zest or orange zest
  • 1 tablespoon fresh lemon juice or orange juice
  • 0.5 cup sugar white, brown, coconut sugar, or honey

Toppings

  • powdered sugar for sprinkling
  • 0.5 cup blueberries for cake toppers

Instructions
 

Preparation

  • Preheat oven to 350F and line a 7 or 9 inch springform pan with parchment paper.
  • In a bowl, beat together sugar or honey, egg yolks, vanilla extract, and lemon zest until well-combined.

Mixing

  • Whisk together almond flour, sea salt, and baking powder; then add to the yolk mixture.
  • In a separate bowl, beat the egg whites until foamy peaks form, then gently fold into the cake batter.

Baking

  • Transfer batter to the pan and bake at 350F for 30-35 minutes.

Notes

This recipe ONLY works with almond flour; it does not require oil or butter due to the separated eggs.
