Ingredients
  

  • 2 cups carrots grated
  • 1 cup apples grated/cubed
  • ½ cup walnuts
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoon water
  • scallions
  • salt to taste
  • black pepper to taste

Instructions
 

  • Coarsely grate carrots and apples.
  • Coarsely chop up walnuts and mince chives.
  • Place all ingredients in a bowl.
  • Add water, oil, and lemon juice, then season to taste with salt and pepper.
