Ingredients
  

Cucumber

  • ¾ piece English cucumber, partially peeled (striped)
  • 1 teaspoon kosher salt, divided

Garlic and Seasonings

  • 4 to 5 cloves garlic, peeled, finely grated or minced Start with 1 to 2 cloves for less intensity
  • 1 teaspoon white vinegar
  • 1 tablespoon Early Harvest Greek Extra Virgin Olive Oil
  • ¼ teaspoon ground white pepper

Yogurt and Herbs

  • 2 cups plain Greek yogurt
  • 1 handful chopped fresh dill or mint (optional)

Serving Suggestions

  • warm pita bread for serving
  • sliced vegetables for serving

Instructions
 

Preparation

  • Use a box grater to grate the cucumbers or use a food processor to finely chop. Toss with ½ teaspoon kosher salt, then squeeze dry using cheese cloth.
  • In a large mixing bowl, combine garlic, remaining ½ teaspoon salt, white vinegar, and extra virgin olive oil. Mix to combine.
  • Add the grated cucumber to the bowl with the garlic mixture. Stir in yogurt, a pinch of white or black pepper, and fresh herbs if using. Stir to combine well.
  • Cover and refrigerate for 30 minutes to a couple hours before serving to thicken and meld flavors.
  • Before serving, stir the tzatziki sauce, drizzle with more olive oil if desired, and serve with your choice of veggies or pita.

Notes

This recipe makes a generous 2 cups of sauce (or up to 32 tablespoons). Store in the fridge in a tightly-covered container and use within 4 days.
