Ingredients
  

Chicken Meatballs

  • 1 lb ground chicken
  • ½ cup panko breadcrumbs (or gluten-free)
  • 2 tablespoons Thai red curry paste
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 each egg (beaten)
  • ¼ cup cilantro (chopped)
  • 1 tablespoon lime juice

Cooking Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix ground chicken, panko breadcrumbs, red curry paste, garlic, ginger, beaten egg, cilantro, and lime juice until combined.
  • Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  • Bake for 18–20 minutes or until golden brown and cooked through.
  • Serve with peanut dipping sauce.

Notes

These meatballs can be made ahead for meal prep and served as appetizers or main dishes.
