Ingredients
  

Beef Filling

  • 1 pound ground beef
  • ½ cup white onion, diced
  • 2.5 tablespoons taco seasoning See recipe link for homemade
  • ¼ cup water

Enchiladas

  • 8 pieces soft taco size tortillas flour or corn
  • 2 cups enchilada sauce See recipe link for homemade
  • 16 oz marbled cheddar cheese, shredded

Optional Toppings

  • Sour Cream
  • Pico de Gallo See recipe link
  • Diced Avocado
  • Diced Green Onions

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef and onion over medium heat until the beef is cooked through.
  • Add taco seasoning and water, stirring until well combined.
  • Place a portion of the beef mixture on each tortilla, roll them up, and place seam-side down in a baking dish.
  • Top with enchilada sauce and sprinkle with cheese.
  • Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.

Serving

  • Top with optional toppings if desired and serve hot.
