  • 1 teaspoon Ground Cardamom Substitute with cinnamon if unavailable.
  • ½ teaspoon Ground Cinnamon Skip if using only cardamom.
  • ¼ teaspoon Salt Balances sweetness.

Binding and Sweetening

  • ¼ cup Coconut Oil Substitute with a neutral oil if desired.
  • cup Maple Syrup Consider date syrup for a different flavor.

Steps

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium mixing bowl, combine rolled oats, chopped walnuts, and Medjool dates. Add ground cardamom, ground cinnamon, and salt, mixing them together well.
  • Melt the coconut oil and pour it into the bowl along with maple syrup, stirring until the dry ingredients are evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet and bake for 22 minutes, stirring halfway through.
  • After baking, allow the granola to cool completely on the baking sheet.
  • Transfer the cooled granola to an airtight container for storage.
