  • 1 cup cranberries
  • 5 tablespoon brown sugar packed
  • 5 tablespoon orange juice
  • 1 teaspoon orange zest
  • 1 cinnamon stick
  • teaspoon vanilla extract

  • Add the cranberries, brown sugar, orange juice, orange zest and cinnamon stick to a medium saucepan.
  • Bring the mixture to a boil. Immediately reduce the heat to maintain a gentle simmer. Continue to simmer for about 5 minutes until all the cranberries have burst.
  • Remove the compote from the stove and remove the cinnamon stick. Stir in the vanilla extract.

Notes

Don’t overheat the compote. Maintain a gentle simmer, not a boil. Add water if needed to adjust consistency. Store leftovers in an airtight container in the fridge for 5 to 10 days.
