  • ½ cup milk any kind
  • 1 ¼ cups cottage cheese preferably Good Culture whole milk
  • 1 Tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup freshly grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • ½ cup pasta cooking water as needed
  • Kosher salt to taste
  • fresh cracked black pepper to taste

  • 12 ounces pasta of choice

Instructions
 

Sauce Preparation

  • Blend the milk and cottage cheese in a high speed blender until smooth.
  • Heat the olive oil in a medium saucepan over medium heat, add minced garlic and cook until fragrant, 1-2 minutes.
  • Turn heat to low, pour in the cottage cheese mixture, parmesan cheese, and Italian seasoning, and stir to melt the cheese.
  • Be careful not to overheat or the sauce can curdle.

Pasta Preparation

  • Cook the pasta according to package directions until al dente.
  • Reserve ½ cup of cooking water, drain the rest, and rinse with cool water.
  • Toss the pasta with the alfredo sauce over low heat until it reaches your desired temperature.

Notes

Store leftover sauce in an airtight container for up to 4 days. Reheat gently to avoid curdling. Add milk as needed to thin.
