Ingredients
  

Brownie Layer

  • 1 box brownie mix prepared according to package directions for a 9x13-inch pan

Cookie Dough Layer

  • ½ cup unsalted butter softened
  • ½ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup heat-treated all-purpose flour
  • ½ teaspoon salt
  • ¾ cup mini chocolate chips

Ice Cream Layer

  • 1 ½ quarts vanilla ice cream softened

Toppings

  • 1 cup chocolate fudge sauce
  • ½ cup whipped topping optional

Instructions
 

Preparation

  • Preheat the oven and prepare the brownie mix according to the package directions. Bake in a 9x13-inch pan until set. Allow the brownies to cool completely before proceeding.
  • In a mixing bowl, beat the softened butter, light brown sugar, and granulated sugar together until creamy and smooth. Add the milk and vanilla extract and mix well. Gradually stir in the heat-treated all-purpose flour and salt until a soft dough forms. Fold in the mini chocolate chips evenly.
  • Spread the cookie dough evenly over the cooled brownie layer in the pan. Then, spread the softened vanilla ice cream evenly over the cookie dough layer.
  • Drizzle the chocolate fudge sauce over the ice cream layer. Gently swirl the fudge into the ice cream if desired.
  • Cover the pan tightly with plastic wrap or foil and freeze for at least 4 hours, or until the ice cream layer is firm and set.
  • Remove from the freezer and slice into 12 bars. Optionally, top each bar with whipped topping before serving.

Notes

For cleaner slices, freeze the bars overnight and use a knife warmed under hot water to cut. Heat-treat the flour by microwaving it until it reaches a safe temperature. You can substitute chocolate chip cookie dough ice cream for vanilla ice cream for added flavor.
