Cookies
- ½ cup butter (113.5 g)
- ½ cup brown sugar (110 g)
- ¼ cup granulated sugar (50 g)
- 1 large egg room temp
- 1 large egg yolk room temp
- 2 teaspoon vanilla
- ½ teaspoon baking powder (0.5 teaspoon)
- ½ teaspoon baking soda (0.5 teaspoon)
- ½ teaspoon salt (0.5 teaspoon)
Crumb Topping
- ½ cup flour (62.5 g)
- ⅓ cup brown sugar (73.33 g)
- 1½ teaspoon cinnamon (1.5 teaspoon)
- pinch salt
- 4 tablespoon butter soft
Glaze
- 1 cup powdered sugar
- cinnamon good sprinkle
- 1-2 tablespoon milk
Preparation
Preheat the oven to 375 F. Line 2 baking sheets with parchment paper.
Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes.
Add egg, yolk and vanilla, mix until smooth on low speed.
Slowly mix in baking powder, soda, salt, cornstarch and flour, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl.
