Ingredients
  

Cookies

  • ½ cup butter (113.5 g)
  • ½ cup brown sugar (110 g)
  • ¼ cup granulated sugar (50 g)
  • 1 large egg room temp
  • 1 large egg yolk room temp
  • 2 teaspoon vanilla
  • ½ teaspoon baking powder (0.5 teaspoon)
  • ½ teaspoon baking soda (0.5 teaspoon)
  • ½ teaspoon salt (0.5 teaspoon)

Crumb Topping

  • ½ cup flour (62.5 g)
  • cup brown sugar (73.33 g)
  • teaspoon cinnamon (1.5 teaspoon)
  • pinch salt
  • 4 tablespoon butter soft

Glaze

  • 1 cup powdered sugar
  • cinnamon good sprinkle
  • 1-2 tablespoon milk

Instructions
 

Preparation

  • Preheat the oven to 375 F. Line 2 baking sheets with parchment paper.
  • Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes.
  • Add egg, yolk and vanilla, mix until smooth on low speed.
  • Slowly mix in baking powder, soda, salt, cornstarch and flour, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl.
