Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 2 medium beets roasted and diced
  • 1 cup feta cheese crumbled
  • ¼ cup red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 each lemon juiced
  • 1 tablespoon fresh herbs (parsley, dill, or basil)
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine chickpeas, roasted beets, feta cheese, and red onion.
  • In a separate small bowl, whisk together olive oil, lemon juice, fresh herbs, salt, and pepper.
