Ingredients
  

For the Chicken

  • 2 tablespoon butter
  • ½ tablespoon olive oil
  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 4-5 medium Yukon Gold potatoes cut into wedges
  • 2 shallots sliced (or 1 medium onion)
  • 6 garlic cloves finely chopped
  • 2 teaspoon Italian seasoning
  • ½ teaspoon red chili flakes
  • 2 tablespoon all-purpose flour
  • ½ cup dry white wine (e.g., Pinot Grigio, Chardonnay, or Sauvignon Blanc)
  • cups chicken broth
  • 1 cup frozen peas
  • 1 tablespoon lemon juice
  • 2 tablespoon fresh parsley finely chopped

Directions

  • Preheat the oven to 400°F (200°C) and set the rack to the middle level.
  • Heat olive oil and butter in a cast iron skillet or oven-proof Dutch oven. Season the chicken with salt and pepper, then sear the chicken, skin-side down, for 4-5 minutes on each side until golden brown. Remove the chicken and set it aside.
  • In the same skillet, add the potato wedges and cook for 5-6 minutes until golden brown. Remove them from the skillet and set aside.
  • Add sliced shallots and sauté for 3-4 minutes. Add chopped garlic, then stir in Italian seasoning and red chili flakes. Mix in the flour and cook for 1 minute. Add white wine, cooking for 1 minute, followed by chicken broth. Stir well, then add salt and pepper to taste.
  • Return the chicken and potatoes to the skillet. Bake uncovered for 30 minutes.
  • After 30 minutes, add the peas and bake for another 15 minutes.
  • Drizzle with lemon juice and garnish with fresh parsley before serving.

Notes

Serve with crusty bread to soak up the flavorful sauce.
