Ingredients
  

For the Filling

  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley optional

For the Herbed Cheese Sauce

  • 1 cup sour cream or Greek yogurt
  • 2 tablespoon mayonnaise
  • 2 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

To Serve

  • 4-6 pita pockets lightly warmed or toasted
  • Extra parsley for garnish optional

  • Prepare the Herbed Cheese Sauce: In a medium bowl, combine sour cream, mayonnaise, parsley, dill, minced garlic, lemon juice, salt, and pepper. Stir until well blended. Cover and refrigerate while you make the filling.
  • Cook the Filling: Heat olive oil in a large skillet over medium heat. Add chopped onions and cook for 2-3 minutes until softened.
  • Sauté the Mushrooms: Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they release their moisture and become golden brown.
  • Brown the Beef: Push the mushrooms and onions to one side of the skillet. Add the ground beef, breaking it apart as it cooks. Stir everything together and continue cooking until the beef is browned and fully cooked.
  • Season and Melt: Stir in the garlic, salt, pepper, smoked paprika, and oregano. Cook for another minute, then sprinkle in the shredded mozzarella and stir until melted and creamy. Remove from heat.
  • Assemble the Pitas: Carefully open each pita pocket. Spoon the beef and mushroom mixture inside, followed by a generous dollop of the herbed cheese sauce.
  • Serve and Enjoy: Garnish with additional parsley if desired, and serve warm.
