Ingredients
  

Filling

  • ½ cup unsalted butter
  • 6 cups frozen sliced peaches No need to thaw
  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • 1 teaspoon fine sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cardamom
  • ¼ teaspoon ginger
  • ¼ teaspoon cloves
  • 1 tablespoon cornstarch
  • 2 tablespoons bourbon optional
  • 1 teaspoon vanilla
  • 2 tablespoons fresh lemon juice about half a medium lemon

Batter

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon fine sea salt
  • 3 teaspoons baking powder
  • 2 cups buttermilk
  • cinnamon sugar to dust top of batter before baking (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F. Generously spray a 9×13 glass or ceramic pan with baking spray.
  • Melt butter in a stainless steel sauté pan over medium heat until foamy. Continue to swirl until browned and nutty, about 2-3 minutes.
  • Remove ¼ cup of the browned butter into a glass measuring cup and set aside. Keep the remaining butter in the pan to cook the peaches.
  • Add peaches, sugars, salt, spices, and cornstarch to the pan. Mix and cook for 10-15 minutes until syrupy. Remove from heat and mix in bourbon (if using), vanilla, and lemon juice.
  • In a medium bowl, whisk together sugar, flour, salt, and baking powder. In another bowl, mix the reserved ¼ cup of browned butter with buttermilk, and combine with the dry ingredients. Reserve ½ cup of batter and set aside.
  • Pour the remaining batter into the prepared pan.
  • Spoon the peach mixture over the batter. Dollop the reserved batter on top. Dust with cinnamon sugar if desired.
  • Bake for 45-55 minutes until bubbling and golden. Let sit for 20-30 minutes before serving.

Notes

This recipe can also be made with fresh or canned peaches. Use fresh peaches: about 12 medium, peeled and sliced. For canned peaches: four 16-ounce cans, drained totaling 32 ounces.
