Ingredients
  

Beef and Veggies

  • 1 lb lean ground beef Can substitute ground turkey
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon chili powder
  • 20-24 oz fresh broccoli May use two 12 oz or two 10 oz bags
  • 1 lb fresh brussels sprouts
  • 1 count bell pepper Color of choice
  • 3 tablespoon olive oil Extra virgin
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon garlic powder

Comeback Sauce

  • 0.5 cup mayo
  • 1 tablespoon ketchup
  • 1 teaspoon lemon juice
  • 0.5 teaspoon Tabasco
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground mustard
  • 0.5 teaspoon salt

Instructions
 

Cooking Instructions

  • Preheat the oven to 425 degrees.
  • Cut any large broccoli florets in half or thirds. Add broccoli florets to a baking sheet in a single layer.
  • Trim the bottom of each brussels sprout and peel away the first layer of leaves. Add them to your baking sheet in a single layer beside the broccoli.
  • Slice the bell pepper into strips. Spread in a single layer on baking sheet beside the other veggies.
  • Drizzle olive oil over all veggies. Sprinkle with salt, pepper, and garlic powder. Bake for 20 to 25 minutes.
  • While vegetables are roasting, add your ground beef (or turkey) to a skillet on medium high. Cook until browned, stirring occasionally. Drain grease if necessary. Stir in salt, pepper, and chili powder.
  • Add all Comeback Sauce ingredients to a bowl and stir together until well combined.
  • To assemble, divide all roasted veggies into bowls. Top with cooked ground beef and Comeback Sauce.

Notes

Can substitute ground turkey for ground beef. Size of broccoli bags may vary depending on shopping choices. Drain grease if beef is not very lean for a healthier meal.
