Ingredients
  

Chocolate Chip Banana Bars

  • ½ cup unsalted butter room temperature
  • 1 cup light brown sugar packed
  • 1 large egg room temperature
  • 1 ½ teaspoon vanilla extract or vanilla bean paste
  • ½ teaspoon fine salt
  • 1 cup all-purpose flour
  • 1 cup mashed overripe banana about 2 large bananas
  • ¾ cup chocolate chips chopped

Instructions
 

Chocolate Chip Banana Bars

  • Preheat the oven to 350°F / 175°C. Line an 8×8-inch baking dish with parchment paper and spray with cooking spray. Set aside.
  • In a large bowl or the bowl of a stand mixer, cream together the butter and brown sugar with a stand mixer or hand mixer on medium-high speed for about 2 minutes.
  • Add in the egg, vanilla extract, and salt. Mix on medium-low speed until combined.
  • Mix in the flour on low until just combined.
  • Fold the mashed banana into the batter until fully incorporated.
  • Fold in the chocolate chips, saving a few to sprinkle on top.
  • Pour the batter into the prepared pan and sprinkle additional chocolate chips on top.
  • Bake for 33-37 minutes, until the edges are golden brown and the center is baked through.

Notes

These bars can be stored in an airtight container for a few days or frozen for up to a month. Ensure parchment is placed between layers to prevent sticking.
