Ingredients
  

Butter and Bananas

  • 120 g butter melted
  • 3 ripe bananas medium to large

Sugars and Eggs

  • 60 g sugar
  • 90 g brown sugar or vergeoise
  • 2 eggs
  • 1 teaspoon vanilla powder

Dry Ingredients

  • 180 g flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Extra Ingredients

  • 100 g walnuts or pecans
  • 150 g chocolate chips

Preparation

  • Start by making brown butter by heating the butter in a saucepan over low heat. Stir regularly until it turns brown and develops a nutty aroma. Remove from heat when it starts to brown, and let cool.
  • Mash the ripe bananas in a mixing bowl with a fork.
  • Add the eggs, both sugars, vanilla, baking soda, and salt, and mix well.
  • Add the cooled brown butter, mix again, then add the flour.
  • After adding the flour, mix gently and briefly to keep the cake soft; it should just be combined.
  • Finally, fold in the chocolate chips and walnuts.
  • Pour the mixture into a high cake pan lined with baking paper.
  • Preheat the oven to 180°C and bake for about 50 minutes. Check with a wooden skewer; it should come out clean when the cake is done.

Notes

You can substitute walnuts with pecans if desired. Make sure to monitor the browning of the butter closely.
