Ingredients
  

For the Crust

  • 2 cups Vanilla Wafers Crushed
  • ¾ cups Unsalted Butter Melted

For the Blondie Batter

  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt Omit if using salted butter
  • 1 cup Granulated Sugar Can substitute brown sugar
  • 1 package Instant Banana Pudding Mix Use instant, not cook-and-serve
  • 2 large Eggs Room temperature preferred
  • 1 teaspoon Vanilla Extract Preferably pure
  • 1 cup White Chocolate Chips Can use dark chocolate instead

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C) and prepare a 9x13 inch baking pan with cooking spray.
  • Crush the vanilla wafers into fine crumbs and reserve one cup for later.
  • Mix the remaining crushed vanilla wafers with melted butter and press into the pan.
  • Bake the crust for 5 minutes until lightly golden.
  • Whisk together flour, baking soda, salt, granulated sugar, and banana pudding mix.
  • Combine eggs, melted butter, and vanilla with the dry ingredients until just mixed.
  • Fold in white chocolate chips and reserved crushed wafers.
  • Spread the batter over the crust and bake for 15-20 minutes or until set.
  • Cool for 20-30 minutes before slicing into squares.
