Ingredients
  

Pasta

  • 1 pound Ziti pasta or Penne, Rigatoni as alternatives

Cheese Mixture

  • 32 ounces whole milk Ricotta cheese about 4 cups
  • 1 cup grated Parmesan cheese plus extra for topping
  • ¼ cup fresh Parsley chopped
  • 2 large Eggs lightly beaten
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Nutmeg freshly grated (optional)

Sauce & Assembly

  • 48 ounces Marinara sauce good quality store-bought or homemade
  • 1 pound fresh Mozzarella cheese torn or sliced into ¼-inch pieces
  • ½ cup grated Provolone cheese optional
  • 2 tablespoons Olive Oil for the baking dish
  • Fresh Basil leaves for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with olive oil or cooking spray.
  • Bring a large pot of salted water to a rolling boil, add the ziti pasta, and cook until al dente.
  • In a large bowl, combine the ricotta cheese, grated Parmesan cheese, chopped parsley, eggs, salt, black pepper, and nutmeg. Mix gently.
  • In the pot, add the cooked ziti and pour about 2 cups of marinara sauce over. Toss gently.
  • Spread about 1 cup of marinara sauce on the bottom of the baking dish.
  • Layer half of the ziti, dollop half of the ricotta mixture, and sprinkle half of the mozzarella.
  • Repeat with the remaining ziti, ricotta mixture, marinara sauce, and mozzarella.
  • Cover loosely with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for another 20-25 minutes until bubbly and golden.
  • Let the baked ziti rest for at least 15-20 minutes before serving.
  • Garnish with fresh basil and an extra sprinkle of Parmesan before serving.
