Ingredients
  

Apple Pie Spice

  • 4 teaspoons ground cinnamon
  • 1.5 teaspoons ground nutmeg
  • 1.5 teaspoons ground cardamom
  • 0.5 teaspoon allspice

Apple Cider Doughnuts

  • 2 cups apple cider reduced to ½ cup
  • 1 cup all-purpose flour (130 grams)
  • 1 teaspoon baking powder
  • 0.5 teaspoon kosher salt
  • 1.5 teaspoons apple spice
  • 4 tablespoons unsalted butter melted, plus additional to butter pan
  • 1 large egg room temperature (50 grams)
  • cup light brown sugar (63 grams)
  • ¼ cup buttermilk

Sugar Topping

  • ¼ cup granulated sugar (50 grams)
  • 2 tablespoons light brown sugar (25 grams)
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon apple pie spice

Maple Syrup Glaze

  • 1 cup powdered sugar sifted (115 grams)
  • 1 tablespoon unsalted butter room temperature (14 grams)
  • 2-3 tablespoons apple cider
  • 6 tablespoons maple syrup
  • teaspoon kosher salt

Instructions
 

Apple Pie Spice

  • Place all the ground spices in a small bowl and whisk until thoroughly combined.
  • This recipe for apple pie spice makes 2-½ tablespoons.
  • The leftover can be used for other desserts and recipes.

Sugar-Cinnamon Topping

  • Place all the ingredients in a small bowl and whisk to combine.
  • Use your fingers to break up any clumps of brown sugar.

Apple Cider Doughnuts

  • Place the apple cider in a saucepan and bring to a boil until reduced to ½ cup.
  • Once it is reduced, pour it into a heatproof measuring cup and cool to room temperature.
  • Preheat the oven to 400°F. Lightly butter the wells of a doughnut pan with melted butter and set aside.
  • Melt 4 tablespoons of butter (for the batter) in a small saucepan until just melted.
  • Whisk flour, baking powder, salt, and 1-½ teaspoons of apple pie spice in a bowl for 30 seconds.
  • In another bowl, whisk the egg and add the brown sugar, whisking until dissolved.
  • Add buttermilk and ¼ cup of reduced apple cider, whisking to incorporate while slowly pouring in melted butter.
  • Gently combine dry ingredients with the wet ingredients using a spatula until no bits of flour remain.
  • Spoon the batter into an 18-inch pastry bag and pipe into the doughnut pan.
  • Bake for 10-12 minutes, rotating halfway through. The doughnuts are done when they spring back when pressed.
  • Cool completely on a wire rack and toss in the sugar-cinnamon mixture while still warm.

Maple Syrup Glaze

  • Sift powdered sugar into a bowl and add butter, working it into the sugar until combined.
  • Add 2 tablespoons of apple cider and 4 tablespoons of maple syrup, stirring until smooth.
  • Adjust glaze consistency by adding maple syrup 1 tablespoon at a time as needed.
  • Dip the doughnuts in the glaze, holding them to coat halfway up the side.

Notes

This recipe can be easily doubled. Use gluten-free baking flour for a gluten-free version.
