Ingredients
  

Chicken

  • 4 breasts Skinless boneless chicken about 1 ½ lb.
  • 1 teaspoon Italian seasoning mix
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • Sea salt
  • Pepper

Filling

  • 12 stalks Asparagus end trimmed
  • 1 ounce Sun-dried Tomatoes chopped
  • 4 slices Mozzarella Cheese

Cooking

  • 1 tablespoon Olive Oil

Instructions
 

Cooking Steps

  • Preheat your oven to 400 F.
  • Place the chicken breasts on a clean chopping board and sprinkle with Italian seasoning, garlic powder, smoked paprika, sea salt, and pepper.
  • Cut each chicken breast lengthwise to create pockets, being careful not to cut all the way through.
  • Trim and wash the asparagus stalks. Stuff the chicken breasts with three asparagus sprigs, a couple of pieces of sun-dried tomatoes, and a slice of mozzarella. Roll to hold the filling.
  • Close the pocket with a toothpick and heat olive oil in a skillet over medium-high heat.
  • Sear the chicken until golden brown, about 3-5 minutes per side.
  • Bake the chicken for 15-20 minutes, or until cooked through and no longer pink inside.

Notes

Serve with a side salad for a complete meal.
