Ingredients
  

  • 150 g plain vegan yogurt heaping cup
  • 1 tablespoon lemon juice
  • 1 clove garlic crushed
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh mint finely chopped
  • 1 tablespoon chives finely chopped
  • 0.5 teaspoon salt
  • 0.5 whole English cucumber
  • 1 whole green apple Granny Smith
  • 6 pieces radishes

Instructions
 

Preparation

  • Pour 150g plain yogurt into a bowl and add lemon juice, garlic, salt and finely chopped herbs. Whisk everything together lightly until smooth and creamy.
  • With a paring knife, slice half an English cucumber lengthwise down the middle. Now thinly slice each half into half moons.
  • Take the apple and cut it into quarters, discarding the core. Slice the apple pieces widthways to be about the same thickness as the cucumber.
  • Thinly slice the radishes into rounds.
  • Add the sliced ingredients to a medium size bowl and pour over the herby yogurt dressing. Stir together to coat everything in the dressing.

Notes

This works well with any sweet non-cooking apple. If you're making this recipe in advance, I recommend storing the dressing separately and mixing everything together gently just before serving. Best served chilled. Use within 2 days.
