Ingredients
  

Liquid Ingredients

  • 2 cups apple cider
  • 20 tablespoons unsalted butter melted and browned
  • 1 large egg room temperature
  • ¼ cup reduced apple cider from initial measurement

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 teaspoon baking powder
  • 1.25 cups light brown sugar
  • ¾ cups granulated sugar
  • ground cinnamon for topping

Instructions
 

Preparing the Cookies

  • In a saucepan, simmer apple cider over medium heat until reduced to about ¼ cup. Let cool.
  • Melt butter on low heat until lightly browned; cool for 15 minutes.
  • Whisk together flour, baking powder, baking soda, spices, and salt.
  • In a bowl, mix browned butter and sugars, then add egg, reduced cider, and vanilla.
  • Gradually mix dry ingredients into the wet mixture until just combined.
  • Use a cookie scoop to drop dough onto a lined baking sheet.
  • Bake at 375°F for 9–11 minutes until edges are set.
  • Cool slightly before rolling in cinnamon sugar and drizzling with icing.
