Ingredients
  

  • 4 large flour tortillas
  • 1 small crisp apple (like Honeycrisp or Gala), thinly sliced
  • 8 oz brie cheese, rind removed if preferred, sliced
  • 2 teaspoons butter or olive oil
  • honey for drizzling Optional
  • fresh thyme for garnish Optional

Instructions
 

  • Heat a nonstick skillet over medium heat and add 1 teaspoon of butter or oil.
  • Place one tortilla in the skillet.
  • Layer about ¼ of the brie slices over the entire tortilla.
  • Add half the apple slices in a single layer, then top with another ¼ of the brie.
  • Place a second tortilla on top and press down gently.
  • Cook for 2 to 3 minutes per side, until golden brown and the cheese is melted.
  • Repeat steps 1–6 with remaining ingredients to make the second quesadilla.
  • Let both quesadillas rest for 1 minute, then slice each into 4 wedges.
  • Optional: Drizzle with honey and sprinkle with fresh thyme before serving.
